Roast Turkey
1 tbsp Italian Seasoning
2 tsp seasoned salt mixture
1 tsp dry ground mustard
1tsp garlic powder
1/2 tsp black pepper
1 12-lb turkey
2 bay leaves
2 celery stalks
1 small onion, quartered
1 small orange, quartered
1-2 tbsp olive oil
Preheat oven to 325.
Combine first five ingredients; set aside. Wash turkey and remove
giblets. Place turkey on a shallow baking pan. Sprinkle 2tbsp of
seasoning inside turkey. Stuff bay leaves, celery stalks, onion, and
orange inside turkey. Rub oil and remaining seasoning mixture over
entire surface of turkey. Loosely tent with foil. Bake 31/2-4 hrs or
until meat thermometer reads 180 in thigh. Baste several times
with pan juices. Remove foil during last 30 min. of cooking.
Perfect Turkey Gravy
1 .87 oz. pkg turkey
gravy mix
2 tbsp flour
1 1/2 c. water
1/2 c. turkey pan drippings
1/2 cooked, chopped giblets
Combine turkey gravy mix
and flour in a medium saucepan. Using whisk, gradually stir in water,
drippings and giblets. Bring to boil over medium heat, stirring
occasionally. Reduce heat and simmer 5 min. or until thickened. Makes 2
1/4 cups.
Chili
Brie in Sourdough
1 1-lb round loaf
sourdough
1 8 oz. wheel brie cheese
1 tbsp softened butter
1 tsp chili powder
1/2 tsp dry ground mustard
1/2 tsp garlic powder
1/2 tsp sugar
Preheat oven to 350.
Combine spices and sugar, set aside. Cut circle in top of bread and
remove bread center to make room for brie. Spread butter in bread;
sprinkle with 2 tsp. spice mixture. With knife, make 2-inch cuts around
edge of bread at 1-inch intervals. Remove rind from brie and place in
bread. Sprinkle brie with remaining spice. Replace top of bread. Bake on
baking sheet 20-30 min. To serve, remove bread top and break into
bite-size pieces. Dip bread pieces in hot brie.
Cheesecake Preheat oven to
350.
Crust:
1 1/2 c. graham craker crumbs
1/2 c. melted buttter
1/3 c. powdered sugar
Combine ingredients and
press into bottom of 8” spring-form pan.
Cheesecake:
3 8 oz. pkgs softened cream cheese
4 eggs
1 cup sugar
1 tsp vanilla,
1 pint dairy sour cream (room temp)
1 21 oz can prepared cherry, blueberry, or strawberry pie filling for
topping.
In large bowl, beat
cream cheese, eggs, sugar, and vanilla. Pour over crust. Bake at 350 for
50 min. (until center is set). To prevent cracking, place shallow pan
1/2 full of water in oven during baking. Spread sour cream on top of
cake. Return to oven for 5 min. Remove from oven and allow to cool.
Spread topping on cheesecake and chill overnight. Remove sides before
serving. Serves 16.
Fruit and Spice Dip
1/2 c. firmly packed
1 lt. brown sugar
1 tsp gr. cinnamon
1/2 tsp allspice
1/4 tsp nutmeg
1 c. heavy cream
Assorted fresh fruit, cut into slices
Combine sugar and
spices; set aside. Beat cream until stiff. Gently fold spice mixture
into cream. Refrigerate until ready to serve. Serve with fruit. Makes 1
cup.
