1 Beef Kidney
1 1/2 Lbs. Sirloin Steak
1 Med. Onion, chopped
1 Oz. seasoned flour
4 Oz. button Mushrooms
1 Tbsp. Worcester Sauce
Brown stock or water with gravy powder added.
Jamaica Pepper (allspice) to taste.
Use an ashet with a wide edge, about half an inch.
Dredge the meat in the seasoned flour and layer it with the onions and mushrooms in the
ashet. Add the stock or water, about a pint, and then put a strip of puff pastry around
the edge of the pan, brush with water and add the top pastry. Don't forget to put a
"bird" in the centre of the pan first to hold up the pastry. Brush with milk and
bake for 1.5 hours at 350 F

An alternative to the above:
1 1/2 lbs. round steak
3/4 lb. kidneys
1/3 cup chopped onions
Saute the kidneys over high heat for 1 to 2
mins. Shake the cut up beef in a bag of seasoned flour. Lightly
grease an ovenproof baker. Place in a layer of beef and then a layer of
kidneys and onions until all the meat is in. Add 2 cups brown stock
and 1 cup beer, cover with foil and bake 1 to 1 1/2 hours at 350. Cool
slightly. Increase the heat to 425. Cover the meat with the pastry and
bake 12 to 15 minutes. |
