1 lb. split yellow peas
2 quarts water
1 carrot, grated
1 medium-sized onion, diced
2 tsp. salt
parsley, as much as you'd like
1 bay leaf
2 cups smoked ham, cubed
pepper
Soak the peas overnight in the water. In the morning, bring it to a boil. Add carrot,
onion and salt. Reduce heat to simmer and add the remaining ingredients. Simmer 3 - 4
hours or until thick, adding more water if necessary. Remove bay leaf, adjust seasonings
