8 oz. plain flour
1 tspn. cream of tartar
1/2 tspn. baking soda
1/2 tspn. salt
2 oz. butter or marg.
1 oz. sugar (caster preferred)
4 fl. oz. milk (just on the turn if available), or sweet.
Brush the tops with milk.
Mix first three together then rub in the butter or marg. Add sugar, regular fine would do,
add the milk and mix to a soft dough. Divide the dough in half and make into two rounds
about 3/4 in. thick. mark into quarters and place on floured baking sheet, brush with milk
and bake 12 to 15 minutes in a hot oven, 220 C, or 425F.
