Rich French Stew


Marinade
1/2 bottle cheap red wine
2 tbsp any vinegar
4 crushed cloves of garlic
1 onion chopped
4 carrots chopped
1 bayleaf - 3 cloves

Stew
5lb stewing steak
1/2lb smk streaky bacon diced
olive oil, 1/2 cup flour
2 tbsp brandy, 2 cloves garlic
orange peel, cup of black olives

Method
Mix marinade, add meat and leave for 24 hours
Fry bacon, garlic in olive oil
Drain meat and keep the marinade
Add meat to bacon mixture and brown
Flare with brandy, add flour, stir well
Add the marinade to the orange peel, stir
Bring to simmer, cover and cook for 3hrs (check often and add water if necessary)
Add olives last 10 minutes, sprinkle with chopped parsley - serve with mashed potatoes, noodles or rice.
This recipe is from Mrs Renton of Falkirk and was one of the two winners of the local Asda Superstore's recipe competition June'99.
