1 1/2 lbs. stew meat, cut into 1/4" cubes
3 Tbsp oil
1 green bell pepper, seeded & diced
1 large onion
1 tsp celery seed
1 can beer
1/2 can beef broth
2 - 7 oz cans green chili salsa
4 Tbsp chili powder
1/2 tsp cumin powder
1/4 tsp oregano
In heavy pot, brown beef in oil, add vegetables and and cook until tender. Add beer,
broth, chili powder and spices. Cook covered, over low heat, stirring occasionally. Remove
cover after 2 hours. Continue cooking until desired thickness.
For variety, try adding 2 oz of tequila. Also chocolate adds something extra to chili.Contributed by Michael Edmonson |
