Prepared corn tortillas
Prepared package of guacamole
1 package frozen broccoli and cauliflower or what ever frozen vegetables
you prefer.
Tofu
Plain Yogurt
Onion
Tomato
1 Lime
Set frozen vegetable out about an hour ahead of time. Add tofu that
has been diced into small squares. Cook this with the vegetables on a
steamer in a covered pan for a very short time, just enough to heat
through.
The packages of guacamole from Albertson's or Wal-Mart come in two
individual packs. For three people one package is enough. Open this,
squeeze out into a bowl. Mince half an onion into very small bits. Mix
this with the guacamole. Be sure you check the way the guacamole is
prepared. Some are spicy and these my husband does not like. For ladies
you may want to leave the onion out.
Cut tomato up into minced bits.
This recipe is for 3 or 4 people. If you have more it is a good idea
to heat your corn tortillas on a grill or a very large skillet. Just warm
the tortillas until they are soft and not crispy. A very small amount of
olive oil on the grill will be enough. Put one of these on each plate.
Cover with vegetables and tofu. Sprinkle with tomato bits and add a dollop
of yogurt in the middle. The lime you have sliced and cut the slices in
half. Center the half slice of lime in the middle of the yogurt so it is
standing up. Garnish with a fresh mint leaf from your herb garden.
